This is a natural, sparkling wine in a large-format "Magnum" bottle ... perfect for parties, beach hangs, or dinner on the boat! Super fresh, bright flavor ... a zippy sparkle, and just an all-around FUN wine!
Grapes are hand harvested, and fermented separately with native yeast. First, the 2 white grape varietals are fermented with maceration/infusion and low temperatures. When the Sumoll is ripe enough, it is picked and co-fermented with the skins of the whites.
Just before finishing the indigenous fermentation (along with control of residual sugar and densities) it is bottled for Ancestral Method. Annual production is around 300 bottles.
